
Finally some nutrients! Home made veggie soup.
1. EVOO (extra virgin olive oil) & veggie in a big pot - fry em up till their soft.
- I used broccoli, carrots, zuchini, parsnip, red onion
2. Add 4-5 cups of water and a can of diced tomatoes (and you can add a soup stock ... I use the Knorr little cubes).
3. Turn up to stove to bring this to a boil and add some rice. It will cook as the soup comes to a boil.
4. Once the rice looks soft turn off the stove and ENJOY!
