
Good Heavens this was GOOD!
Basmati Rice made in my rice cooker (I use my rice cooker SO much... love it). In a frying pan with EVOO I fried up some tofu, canned corn, red onion, green pepper and snow peas.. once it was browned I added some canned Diced Tomatoes... after I took this picture I shredded a little bit of cheddar cheese on it and it was SO YUMMY. Tasted like something Mexican! So simple... simple ingredients... quick to make... and now I have lunch for tomorrow too! : )
