Non-traditional Dinner


What the hell is this you ask? haha.
One free-run (very important) brown egg, some egg whites, spinach, red onion, baby tomatoes, beets, green pepper and two peices of cheese : )
It's not your average dinner but it is delicious and filling! Oh, I also put a little bit of salsa on my plate to put on the eggs. It is a great substitute for ketchup (full of sodium/sugar/garbage). Salsa still has some sugar in it... but a much better option. You wouldn't think to put beets in scrambled eggs but they are delish! Also notice how jam packed the plate is with veggies... Yum Yum! See you at snack time.

Tea after work...

Home from work. Havin' a fennel seed tea... Kinda tastes like black licorice. Dont drink tea often but the weather made me want one...

Lunch Time...


2:52.. and it's time for lunch! I know you're all thinking Im nuts ("omg that's so late"). But like I said before... I eat when I'm hungry. Some days my lunch is earlier some days even later. This lunch is leftovers from lastnights dinner. Gluten free pasta noodles, veggies that I fried up with EVOO (extra virgin olive oil), and a jar of pasta sauce (Mushroom garlic - PC brand). There is also some extra firm tofu in here... yum. This meal is so quick, easy and yummy. I also do this with spaghetti squash... which I highly reccommend!!

Snack Time!!



Alrighty.. 12:24 now. Hungry... but not hungry enough to eat my lunch! So, snack time!
I have banana pro-biotic yogurt (PC Brand). Which is not the best (I prefer Greek yogurt now) BUT they had none at the grocery store on the weekend so I bought this delicious kind! To put in my yogurt I have some gluten free cinnamon granola, plain slivered almonds, flax seeds and dried cranberries. And up top... just some dry roasted almonds... geez I'm going to turn into an almond today.

So, it is now 10:21am... And I'm feeling hungry... Breakfast time. Every weekday I bring my breakfast to work because Im not hungry when I first wakeup. My motto is EAT when your HUNGRY people!!! This is plain brown ricecakes with almond butter and sliced banana ontop. So, ricecakes ingredients: brown rice. Almond butter ingredients: almonds. Banana is also just a banana. Now compare this to bread toasted with regular peanutbutter. Ew. I know.

It's Morning Coffee Time!

Hi Everyone,
Soon you will realize that I drink coffee every morning... as SOON as I wake up. I am not picky about the brand but this particular cup is from Costco... good ole Kirkland (courtesy of my Costco-obsessed boyfriend). : )

As of right now I use 10% cream in my coffee. I eventually would like to switch to Almond Milk... I used to use it, but got suckered back into the cream. Most weekdays I will have 2 mugs full... on weekends usually more. Depends if Im in a rush or chilling in my pj's all morning. : )

Welcome to What.I.Eat. by Learn.Eat.Live.

Welcome to my first BLOG!

Starting tomorrow I will be documenting everything I eat everyday by uploading pictures and brief messages. It's my very own interactive/online/picture food diary.

I hope this BLOG will encourage viewers and readers to educate themselves on the nutritional value of food and where their food comes from. I want everyone to be conscious of what they are eating on a daily basis by making better choices at the grocery store, in the kitchen, and out and about.

As I mention above, I by no means have a "perfect" diet but I am very conscious of what I eat and the choices I make. Yes, I eat chips, candy, french fries and chocolate (all in moderation)... so don't be alarmed if these pictures pop up on this BLOG. You could go crazy with all the nutritional information that's out there today... so... keep it simple and choose your food battles!
